Broccolini with Brown Butter and Lemon

1 tablespoon vegetable oil

1 bunch broccolini, ends trimmed, stalks halved if thick

4 tablespoons unsalted butter

1 teaspoon crushed red pepper

Zest and juice of 1 lemon

Salt and pepper

Heat oil in a skillet over medium-high heat until hot. Add broccolini in a single layer and let cook without stirring until brown on one side, about 90 seconds. Flip broccolini and sear on the second side. Cover pan, reduce heat to medium, and steam until broccolini is tender and bright green, about 3 minutes. Transfer to a serving plate and season with salt and pepper. 

Add butter to pan and let cook until the foam is a tan color, and the butter smells nutty, about 2 minutes. Add crushed red pepper and lemon juice. Pour over broccolini and garnish with zest.
