Quick Brisket Bites

Rub:

1 cup dark brown sugar

1/2 cup chili powder

1/4 cup smoked salt or kosher salt

1 brisket (flat or point cut), about 3 pounds, cut into 

1 1/2-inch chunks

Sauce:

1/2 cup rub

1/2 cup brown sugar 

1/4 cup tomato paste

1/4 cup cider vinegar

Salt and pepper

Whisk together rub ingredients. Remove 1/2 cup rub and set aside. Add brisket cubes to remaining rub and toss to coat. Transfer to a multicooker or pressure cooker and cook on high for 25 minutes. Let steam release naturally. (Or place in a baking pan and cover with foil and bake in a preheated 325F oven for 2 hours). 

Meanwhile, in a small saucepan, whisk together sauce ingredients. Bring to a simmer over medium heat, then reduce heat and let simmer until thickened, about 15 minutes. Remove from heat and season to taste.

Heat broiler to high. Spread cooked brisket cubes in an even layer and broil until lightly charred, turning halfway through, about 5 minutes total. Serve with sauce.
