Banana Bread Foster

1 1/2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup butter (1 stick), melted

1/2 cup granulated sugar

1/2 cup dark brown sugar

2 eggs

2 teaspoons vanilla extract

1/2 cup buttermilk

3 medium ripe bananas, mashed

To flambé, optional 

(per 4 slices): 

2 tablespoons butter

2 tablespoons dark rum

Vanilla ice cream, for serving

Heat oven to 350F. Spray a 9×5-inch loaf pan with nonstick spray. In a bowl, whisk together dry ingredients.

In a mixing bowl whisk together the 1/2 cup of melted butter and sugars. Whisk in the eggs and vanilla. 

Stir in the flour mixture, then fold in bananas and buttermilk.

Pour batter into prepared pan and bake 60 minutes or until crust is golden brown and a toothpick inserted into the center comes out clean. Let stand until cool enough to handle, then slice into 1/2-inch slices. 

To flambé: In a skillet, melt butter. Lay slices in pan and toast until lightly browned, then turn and toast other side. Add rum, if using, and light with a stick lighter or gas flame to ignite. Let flames burn until they die out. Serve with ice cream.
