Thai-style watermelon salad

Juice of 2 limes

1 tablespoon fish sauce

2 teaspoons honey

1 jalapeño seeded and diced

1 shallot, thinly sliced

4 cups diced seedless watermelon

1 tablespoon chopped mint leaves

1/4 cup unsalted peanuts, roughly chopped 

In a bowl, whisk together lime juice, fish sauce, and honey. Stir in jalapeño and shallots, then add watermelon and toss to mix. Add mint and peanuts and toss to mix. Serve immediately.
