1/2 cup white miso
1/2 cup (1 stick) butter, melted
2 pounds small red potatoes, halved
Kosher salt and pepper
Heat oven to 400F. Line a sheet pan with parchment or foil.
In a large bowl, whisk together miso and butter. Add potatoes and toss to coat. Spread out in a single layer on prepared sheet pan and season to taste with salt and pepper. Bake until tender, about 30 minutes. Serve hot.
