4 small zucchini
1 pound ground pork
1 small onion, diced
3 cloves garlic, minced
1 tablespoon minced thyme
1 egg
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese, plus more for topping
1/2 teaspoon red chili flakes
Salt and pepper to taste
Tomato sauce, for serving
Heat oven to 400°. Line a baking dish or sheet pan with foil. Use a spoon to scrape centers out of zucchini. Add to mixing bowl. Place corn zucchini on prepared pan and drizzle with oil then seasoned with salt and pepper. Add remaining ingredients to mixing bowl. Use hands to mix until thoroughly combine.
Stuff ground pork mixture into cavities and zucchini. Bake until pork is cooked through, about 35 minutes. Top with additional Parmesan and serve hot with tomato sauce.
