12 tablespoons (1 1/2 sticks) unsalted butter
1/3 cup white miso
1 cup finely grated parmesan
1 pound capellini, cooked

according to package directions, 1/2 cup pasta water reserved
Freshly ground black pepper
Sliced green onions, for garnish
In a large skillet over medium heat, melt butter. Continue cooking butter, stirring occasionally, until brown flecks appear and butter smells nutty, about 8 minutes. Remove from heat, then whisk in miso and black pepper to taste. Add cooked pasta and pasta water and toss until pasta is coated. Add cheese and toss again until cheese has melted. Serve topped with sliced green onions.
