1/2 cup harissa

1/4 cup honey
2 tablespoons oil
1 teaspoon kosher salt, plus more to taste
2 large sweet potatoes, peeled and diced into
1/2-inch cubes
Heat oven to 425F. Line a sheet pan with parchment. In a mixing bowl, whisk together all ingredients except potatoes. Add potatoes and toss to coat. Spread out on prepared pan.
Bake until tender, about 40-50 minutes. Season with additional salt to taste and serve.
