Taco Soup

Seasoning Mix:

3 teaspoons kosher salt 

2 teaspoons cumin

2 teaspoons chili powder

1 teaspoon smoked paprika 

1 teaspoon garlic powder 

Soup:

2 pounds ground beef 

2 onions, diced 

1 (28-ounce) can diced or crushed fire-roasted tomatoes 

4 cups chicken or beef broth 

1 (15-ounce) can black or pinto beans 

1 cup corn kernels 

Broken tortilla chips

Taco garnishes: shredded cheese, sour cream, pico de gallo, cilantro, avocado, etc. 

Make seasoning mix: In a small bowl, stir together ingredients. Set aside.

In a Dutch oven or soup pot over medium-high heat, brown ground beef. Add seasoning mix, then onions. Cook until onions are translucent, about 3 minutes. 

Stir in tomatoes, then broth. Reduce heat to medium-low and simmer 20 minutes. Add beans and corn and simmer 10 minutes more.

To serve, top with broken tortilla chips, and whatever taco garnishes desired.
