6 Persian cucumbers
3 cloves garlic, minced
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon sesame oil
2 teaspoons oil from chili-onion crisp, or to taste
3 scallions, thinly sliced
1 tablespoon chili-onion crisp, or to taste
Crush the cucumbers with the side of the knife, then slice thinly on the bias. Combine with the garlic in a bowl.
In a small bowl, combine vinegar, soy sauce, sugar, salt, sesame oil and chili oil, if using.
Pour the dressing over the cucumbers and toss to mix. Top with scallions and chili crisp and serve immediately.
