1 can black beans, drained
and rinsed
1 cup frozen roasted corn, thawed
1 cup grape tomatoes, quartered
3 green onions, sliced
1 jalapeno, seeded and diced
1/4 cup red wine vinegar
2 tablespoons olive oil
3 tablespoons chopped cilantro
Salt and pepper
Combine beans, corn, tomatoes, onions, and jalapeno in a mixing bowl. Add vinegar and oil and toss to mix. Add cilantro just before serving. Season with salt and pepper and serve.
