8 ounces goat cheese, at room temperature
1/4 cup honey
1/8 teaspoon salt
1 egg, beaten
1 prepared pie crust
12 ounces blackberries
Heat oven to 400F. Line a baking sheet with parchment. In a mixing bowl, combine goat cheese, honey, salt and egg, Stir together until smooth.
Roll out pie crust to
12 inches. Place crust on prepared pan. Spread goat cheese mixture on crust, leaving a 2-inch border. Top with blackberries. Fold edge of crust up around edge of filling.
Bake until filling is set, and crust is golden, about 45 minutes. Let stand 20 minutes before cutting and serve at room temperature, or chill and serve cold.
