Brown Butter Honey Cookies

3 1/4 cups flour.

1 1/2 teaspoons baking soda

1/2 teaspoon kosher salt, plus more for topping cookies

1 cup (2 sticks) unsalted butter

1 cup granulated sugar

1 cup light brown sugar

1/4 cup honey

2 eggs

1 teaspoon vanilla extract

Heat oven to 350F. Line 2 baking sheets with parchment. In a mixing bowl, stir together flour, baking soda and salt. 

In a medium saucepan, heat butter over low heat until solids on the bottom of the pan are golden brown, about 6 minutes. In a large bowl, stir together sugars. Stir in butter and honey, then eggs and vanilla. Stir in flour mixture. 

Scoop out dough with a #20 scoop onto the prepared baking sheets, leaving 2 inches between each scoop. Flatten scoops slightly and sprinkle lightly with kosher salt. Bake until golden brown and cracked on top, about 16 minutes. Let stand on baking sheets until firmed up, about 5 minutes, then transfer to a rack to cool.
