Chopped Salad with Feta Vinaigrette

1 red onion, thinly sliced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 seedless cucumber, diced

1 cup halved cherry tomatoes

1 can garbanzo beans, drained and rinsed

1 head romaine lettuce, chopped

Vinaigrette:

1/2 cup red wine vinegar

1/2 cup olive oil

8 ounces crumbled feta

2 tablespoons chopped chives

Salt and pepper

In a large bowl, toss together salad ingredients. 

In a jar with a lid, combine dressing ingredients, season with salt and pepper, and cover. Shake until mixed. Pour dressing over salad and toss to mix. Serve immediately.
