Cold Peanut Noodles

16 ounces spaghetti or soba noodles

3/4 cup creamy peanut butter 

3 tablespoons soy sauce 

2 tablespoons honey

2 tablespoons rice vinegar

2 tablespoons hot water 

1 tablespoon toasted sesame oil

1 teaspoon minced garlic

1 teaspoon minced ginger

1 teaspoon Sriracha, or to taste

Sliced cucumbers and green onions, for garnish

Cook noodles according to package directions, then drain and rinse with cold water to cool and completely remove starch. Drain completely. 

Meanwhile, whisk together remaining ingredients, except for cucumbers and green onions until smooth. When noodles have drained, add them to the mixture and toss to coat. Cover and chill until serving. Serve garnished with sliced cucumbers and sliced green onions.
