Salt, for cooking water

1 (9.5-ounce) package
soba noodles
1 cup sesame seeds, toasted
1/4 cup soy sauce
3 tablespoons rice vinegar
3 tablespoons honey
3 tablespoons toasted
sesame oil
6 green onions, thinly sliced
Heat a large pot of salted water to a boil. Add soba noodles and cook, stirring from time to time, until tender but not mushy. Drain and rinse under cold water until cold.
Meanwhile, in a bowl, whisk together soy sauce, vinegar, honey and sesame oil. Add noodles and toss to coat. Add sesame seeds and green onions and toss again. Serve cold or at room temperature.
