Cornflake Toffee

6 cups cornflakes

1 cup (2 sticks) unsalted butter

1 1/3 cups light brown sugar

1 1/2 teaspoons coarse salt

1 1/2 cups chocolate chips

Heat oven to 375F. Line a sheet pan with parchment or foil. Place cornflakes in a large mixing bowl. 

In a saucepan over medium heat, combine butter, brown sugar and salt. Once butter melts, cook, stirring, until mixture bubbles and sugar is dissolved, about 4 minutes. 

Pour butter mixture over cornflakes and stir until completely mixed. Spread out in an even layer. Bake until light brown, 15-18 minutes. Remove from oven and immediately scatter chocolate chips over the top. Let stand until chips are shiny, about 5 minutes, then use a spatula to spread chocolate over cornflakes. Let cool to room temperature, about 20 minutes more. Cut into pieces to serve. Store in an airtight container.
