Green Beans with Mushrooms and Boursin

8 ounces cremini

mushrooms, sliced

1 pound green beans, ends trimmed

1 shallot, thinly sliced

1/2 round garlic and fine herbs boursin

Vegetable oil

Kosher salt and black pepper

In a large skillet, heat 2 tablespoons vegetable oil until hot. Add mushrooms and cook until soft, about 6 minutes. 

Meanwhile, steam green beans either in the microwave or on the stovetop until bright green, about 4 minutes. 

Add shallot to mushrooms and cook until soft, about 2 minutes. Add green beans and toss. Add boursin and stir until boursin is melted. 

Season with salt and pepper and serve hot.
