3 tablespoons harissa
1/3 cup vegetable oil
1 pound peeled and cubed sweet potatoes
Salt and pepper
Heat oven to 425F. Line a sheet pan with parchment paper.
In a large bowl, whisk together harissa and oil. Add sweet potatoes and toss to coat. Season with salt and pepper and toss again. Spread potatoes out on prepared pan and roast until soft, about 25 minutes. Serve hot.
