Key Lime Pie with Honey Lime Whipped Cream

8 egg yolks

2 cans sweetened condensed milk

3/4 cup key lime juice

2 tablespoons grated lime zest

1/2 teaspoon kosher salt

1 graham cracker crust 

Honey lime whipped cream:

1 cup heavy cream

2 tablespoons honey

1 tablespoon grated lime zest

1/4 teaspoon kosher salt

Heat oven to 350F.

In a mixing bowl, whisk together egg yolks and sweetened condensed milk until combined. Add salt and lime juice and whisk until mixture has thickened. Pour into graham cracker crust and bake until set, about 25 minutes. Let cool completely.

To make whipped cream, use a hand mixer or stand mixer to beat cream to soft peaks. Beat in honey, lime zest and salt. Serve with cooled pie.
