8 ounces cream cheese, at room temperature
2 cups shredded extra sharp cheddar
1 cup finely chopped kim chee, liquid drained and reserved
3 scallions, thinly sliced, plus more for garnish
1/4 teaspoon cayenne, or to taste
Salt and pepper
In a bowl, mix cheeses until combined. Mix in kim chee, scallions, and cayenne, then add kim chee liquid a tablespoon at a time to reach desired consistency. Season to taste with salt and pepper.
