1 pound ground lamb
1 pound 80/20 ground beef
1 onion, minced
2 cloves garlic, minced
2 egg yolks
3 tablespoons each minced mint, parsley and dill, plus more for garnish
2 tablespoons each lemon zest and juice
Kosher salt and black pepper
Heat oven to 350F.
In a mixing bowl, combine meats. Then add remaining ingredients and work with hands to mix until ingredients are evenly distributed. Season with salt and pepper.
Form mixture into 1-inch balls and arrange on prepared baking sheet. Bake for 12 minutes, then increase temperature to 400F. Cook 8 minutes more, until browned. Garnish with herbs and serve.
