One-Pan Bratwurst and Vegetables with Gravy

1 head green cabbage, cored and chopped

2 sweet potatoes, peeled and chopped

2 onions, peeled and sliced

1 pound bratwurst

1 cup chicken broth

2 tablespoons flour

Olive oil

Salt and pepper

Heat oven to 400F. In a large bowl, toss the cabbage with oil to coat. Season with salt and pepper and spread into a single layer in the bottom of a 9 by 13 roasting pan. Toss sweet potatoes and onions with oil and season with salt and pepper and spread over the cabbage. Toss brats with oil and place on top of vegetables. Whisk flour into remaining oil in bowl, then whisk in broth. Pour mixture into roasting pan. Bake until one side of sausages are browned, about 20 minutes. Turn them, and return to oven to bake until cooked through, about 20 minutes longer. To serve, plate sausage and vegetables, then spoon gravy (in the bottom of the roasting pan) over.
