Parmesan-Crusted Flounder

4 flounder fillets

4 tablespoons unsalted butter, melted

1 1/2 cups panko

3/4 cup finely grated Parmesan

Salt and pepper, to taste

Heat oven to 400F. Line a baking sheet with parchment. 

Lay flounder fillets on prepared baking sheet and season lightly with salt and pepper. Brush with butter. 

In mixing bowl, combine panko, Parmesan and remaining butter. Season lightly with salt and pepper. 

Pat crumb mixture onto fillets. Bake until fish is flaky and topping is golden, about 15 minutes. Let stand for 5 minutes before serving.
