2 1/2 pounds pork shoulder, thinly sliced
1 1/2 cups sugar, divided
1/4 cup fish sauce
4 cloves garlic, grated
1/2 teaspoon toasted sesame oil
1 sweet onion, thinly sliced
Salt and pepper
Thinly sliced scallion greens, for garnish
Season pork with salt and pepper. Heat 1 cup sugar in a large skillet over medium heat until melted and just starting to smoke. Add pork and toss to coat. (Sugar will seize up, but it will loosen when it’s cooked more.) Cover and cook 2 minutes, then stir in fish sauce, garlic and sesame oil. Reduce heat to low and simmer 25 minutes, stirring occasionally. Increase heat to medium. Stir in onion and cook until soft and sauce coats pork, about 10 minutes. Serve garnished with scallion greens.
