1 pound haricots verts
1/4 cup unsalted butter
5 scallions, thinly sliced
Salt and pepper
Heat oven to 475F. Line a baking sheet with parchment. Spread green beans on lined baking sheet and roast until browned in spots, about 22 minutes.
Meanwhile, melt butter in a small skillet over medium heat. Add scallions and continue cooking until butter is browned (foam will be tan and butter will smell nutty). Transfer to a mixing bowl. Add roasted green beans and toss to coat. Season with salt and pepper to taste.
