Roasted Shishitos with Soy-Garlic Mayo

12 ounces shishito peppers

2 tablespoons vegetable oil

1/2 cup mayonnaise

2 tablespoons soy sauce

2 cloves garlic, grated

Kosher salt

Heat oven to 400F. Line a sheet pan with foil. 

In a large bowl, toss together peppers and oil until peppers are coated. Season with salt and toss again. Spread into an even layer and roast until soft, about 7 minutes. Turn on broiler and broil until charred, about 2 minutes. 

Meanwhile make mayo. In a small bowl, whisk together mayonnaise, soy sauce and garlic. Season with salt. Serve peppers hot with mayo on the side.
