Sheet Pan Pancakes

3 cups all-purpose flour

2 tablespoons baking powder

1/3 cup sugar 

1/2 tsp salt

2 large eggs

1 1/2 cups milk 

1 cup Greek yogurt

1/2 cup (1 stick) melted unsalted butter, plus more for pan and top of pancake 

Maple syrup, fresh fruit, or powdered sugar, for serving

Heat oven to 425°F. Line baking sheet with foil or parchment. Brush with melted butter. 

In a mixing bowl, whisk together all ingredients until smooth. Pour batter into prepared pan, using a spatula to spread evenly. 

Bake for 20-22 minutes or until golden brown and center is set. 

Brush top of pancake with butter. 

Cut, serve with maple syrup, fresh fruit or a sprinkle of powdered sugar.
