2 tablespoons vegetable oil
12 ounces king oyster
mushrooms, sliced into 1/4-inch pieces
1/4 cup butter, melted
1/4 cup soy sauce
1 tablespoon honey
1/4 teaspoon black pepper
2 scallions, thinly sliced
In a large skillet, heat vegetable oil until hot. Add mushroom pieces and cook until golden, about 5 minutes per side. Meanwhile, stir together butter, soy sauce, honey and pepper. Add the glaze mixture to the pan and reduce the heat to medium-low. Toss the mushrooms in the glaze until coated, then let glaze reduce until thick, about 4 minutes. Transfer to a serving dish and top with sliced scallions.
