Summer Melon Salad

Juice of 2 limes

1 tablespoon honey

1/2 cup vegetable oil

1 Tuscan melon or cantaloupe, peeled, seeded, and diced

1 cup halved cherry tomatoes

2 Persian cucumbers, diced

6 ounces crumbled goat cheese

1/4 cup sliced mint leaves

Salt and pepper

In a large bowl, combine lime juice and honey. Whisk in oil and season with salt and pepper. 

Add remaining ingredients and toss to combine. Season again with salt and pepper and serve immediately.
