Turkey and White Bean Stew

2 tablespoons vegetable oil

1 yellow onion, diced

2 cloves garlic, minced

1 pound ground turkey

2 tablespoons chili powder

1 teaspoon dried oregano

1 quart chicken stock

2 (15-ounce) great northern beans

1 cup frozen corn

1/2 cup chopped cilantro

1/2 cup sour cream

Salt and pepper

Avocado, shredded cheese and green onions, for garnish

In a saucepan over medium-high heat, heat oil until hot. Add onion and cook until soft, then add garlic and cook 30 seconds. 

Add turkey and season with chili powder and dried oregano. Cook until cooked through, about 4 minutes. Add stock and simmer 20 minutes. Stir in beans, corn and cilantro and simmer 10 minutes more. Remove from heat and stir in sour cream. Season with salt and pepper. Serve garnished with avocado, shredded cheese and green onions.
