1/2 cup red wine vinegar 1/4 cup sugar 2 tablespoons olive oil 1 tablespoon kosher salt 1/2 teaspoon black pepper 10-ounce package cole slaw mix In a mixing bowl, whisk together all ingredients except coleslaw until sugar is dissolved. Add coleslaw mix and toss to coat. Refrigerate for 4 hours, toss again and serve.
